This dish is very unlike the things I normally make. Nonetheless, it’s becoming one of my go-to meals because it has something incredibly warm and soothing. It has all the heartiness of a rich, decadent dish and the lightness of a summer afternoon snack.
On the one hand, you have a base of rice, but then you have fresh vegetables in a light broth. But you also get your protein from the chopped up ham (optional) and the gushing poached egg, which is undoubtedly the best element in the bowl. I mean, just imagine cutting into that runny center! But then – the yolk thickens just a little bit with the heat from the soup, becoming even creamier. Ok, you get the point.
